Ingredients
- 10cm / 4in coarsely grated Courgette (zucchini)
- 1 coarsely grated Apple
- 80g / 3oz grated Cheddar or vegan cheese
- 2 large Tortilla wraps
Preparation
- Gather the coarsely grated Courgette (zucchini) and Apple, squeeze out the liquid, and mix with 80g / 3oz grated Cheddar or vegan cheese in a bowl.
- Heat a large dry frying pan over medium heat.
- Place one large Tortilla wrap in the pan, spoon half the mixture onto one half, and fold to enclose.
- Add the second Tortilla wrap and remaining mixture, folding over to enclose.
- Cook for 4–5 minutes on each side, flipping once until golden. Cool for a few minutes and cut into wedges to serve.
