Ingredients

1 small Avocado, 1/2 Lemon juice, 30g / 1oz thinly sliced Cheddar, 2 slices White bread, 2 tsp unsalted softened Butter, to taste freshly ground Black pepper

Preparation

1. Remove the skin and pit of 1 small Avocado. 2. Mash the flesh with the juice of 1/2 Lemon and a good grinding of Black pepper. 3. Spread the mixture over 1 slice of White bread, ensuring you reach all the edges. 4. Top with 30g / 1oz thinly sliced Cheddar and the second piece of bread. 5. Heat a griddle pan over medium heat. 6. Spread 1 tsp unsalted softened Butter edge-to-edge on the top side of the bread, then pop the sandwich onto the pan, buttered-side down. 7. Spread 1 tsp unsalted softened Butter on the other side of the sandwich, and fry for a couple of minutes before flipping. 8. Cook until crispy and golden on the outside, but oozy and melty on the inside.
