Ingredients
- 1 small Avocado
- 1/2 Lemon juice
- 30g / 1oz thinly sliced Cheddar
- 2 slices White bread
- 2 tsp unsalted softened Butter
- to taste freshly ground Black pepper
Preparation
- Remove the skin and pit of 1 small Avocado.
- Mash the flesh with the juice of 1/2 Lemon and a good grinding of Black pepper.
- Spread the mixture over 1 slice of White bread, ensuring you reach all the edges.
- Top with 30g / 1oz thinly sliced Cheddar and the second piece of bread.
- Heat a griddle pan over medium heat.
- Spread 1 tsp unsalted softened Butter edge-to-edge on the top side of the bread, then pop the sandwich onto the pan, buttered-side down.
- Spread 1 tsp unsalted softened Butter on the other side of the sandwich, and fry for a couple of minutes before flipping.
- Cook until crispy and golden on the outside, but oozy and melty on the inside.
