Ingredients
1 baked Sweet potato, 1 tsp Butter, 60g / 2.1oz chopped Mixed vegetables, 2 rashers finely chopped Bacon, 2 tbsp Cream cheese, 1 tbsp chopped Parsley, 2 tbsp grated Cheddar
Preparation
1. Preheat the oven to 180°C (356°F). 2. Slice the baked Sweet potato lengthways, scoop out the flesh and set it aside in a bowl. Keep the potato skin. 3. Heat 1 tsp Butter in a frying pan and fry 60g / 2.1oz chopped Mixed vegetables until soft. 4. Mix the cooked vegetables with the Sweet potato flesh, 2 tbsp Cream cheese, and 1 tbsp chopped Parsley. 5. Spoon the mixture back into the potato skin and top with 2 tbsp grated Cheddar. 6. Place the filled Sweet potato on a baking tray and bake for 15 minutes to heat through.
