Ingredients
- 1 baked Sweet potato
- 1 tsp Butter
- 60g / 2.1oz chopped Mixed vegetables
- 2 rashers finely chopped Bacon
- 2 tbsp Cream cheese
- 1 tbsp chopped Parsley
- 2 tbsp grated Cheddar
Preparation
- Preheat the oven to 180°C (356°F).
- Slice the baked Sweet potato lengthways, scoop out the flesh and set it aside in a bowl. Keep the potato skin.
- Heat 1 tsp Butter in a frying pan and fry 60g / 2.1oz chopped Mixed vegetables until soft.
- Mix the cooked vegetables with the Sweet potato flesh, 2 tbsp Cream cheese, and 1 tbsp chopped Parsley.
- Spoon the mixture back into the potato skin and top with 2 tbsp grated Cheddar.
- Place the filled Sweet potato on a baking tray and bake for 15 minutes to heat through.
