How to Prepare
1. Blend 2 chopped Bananas, 200g / 7.05oz Acai, and 80ml / 2.7fl oz Coconut milk until smooth. 2. Insert ice-cream sticks into six small popsicle molds. 3. Pour in the banana mixture and freeze for 2-3 hours or until firm. 4. Toast 1 tbsp slivered Almonds in a dry frying pan over low heat until slightly golden. Set aside to cool. 5. Melt 120g / 4.2oz finely chopped Dark chocolate in the microwave or over simmering water until smooth. Allow to cool slightly. 6. Line an airtight container with baking paper. 7. Remove popsicles from molds, dip each into melted chocolate, then into toasted almonds. 8. Place in container and freeze for 30 minutes before serving.
Good to Know
You might want to melt a little more chocolate than needed to make it easier to dip the popsicles. Substitute any other frozen fruit you like such as berries, mango, or kiwifruit.
