- 0.5 small Avocado
- 4 slices Wholegrain bread
- 100g / 3.53oz cooked
- sliced Lean beef
- 1 thinly sliced Tomato
- 4 slices tinned Beetroot
- 50g / 1.76oz Baby spinach or rocket
- 1 tsp Dijon mustard
Preparation
- Slice 0.5 small Avocado and divide between 2 slices of Wholegrain bread.
- Top with 100g / 3.53oz cooked, sliced Lean beef, 1 thinly sliced Tomato, 4 slices tinned Beetroot, and 50g / 1.76oz Baby spinach or rocket.
- Spread 1 tsp Dijon mustard over another 2 slices of Wholegrain bread.
- Place the mustard-spread bread on top of the rocket-spinach mix.
