Ingredients
- 1 tbsp Butter
- 1 chopped Onion
- 1 clove crushed Garlic
- 3 stalks fresh Thyme
- 150g / 5.29oz cubed
- bone removed Beef shin
- 2 tsp Tomato paste
- 200g / 7.05oz peeled and diced Sweet potato
- 175g / 6.17oz peeled and sliced Carrots
- 250ml / 8.45fl oz Chicken stock
Preparation
- Melt 1 tbsp Butter in a saucepan over medium heat. Add 1 chopped Onion and fry until very soft.
- Add 1 crushed Garlic clove and 3 fresh Thyme stalks, cook for 1 minute.
- Add 150g cubed Beef shin and fry until it browns slightly.
- Add 2 tsp Tomato paste and cook for 1 minute.
- Add 200g peeled and diced Sweet potato, 175g peeled and sliced Carrots, and 250ml Chicken stock.
- Simmer over gentle heat for 60-90 minutes with the lid on, until the meat is very soft.
- Blend to desired consistency or mash with a potato masher.
