Ingredients

- 200g / 7oz drained Canned sweetcorn
- 100g / 3.5oz drained Wilted spinach
- 100g / 3.5oz Self-raising flour
- 2 Egg
- 70ml / 2.5fl oz Milk
- 1 tsp Baking powder
- 1 tbsp Oil

Preparation

1. Add 200g / 7oz drained Canned sweetcorn, 100g / 3.5oz drained Wilted spinach, 100g / 3.5oz Self-raising flour, 2 Eggs, 70ml / 2.5fl oz Milk, and 1 tsp Baking powder to a blender and blend until smooth.
2. Heat a large non-stick frying pan with 1 tbsp Oil over medium heat.
3. Spoon tablespoons of the mixture into the pan and gently shape into circles.
4. Cook for 1 minute until bubbles form, then flip with a spatula and cook for another minute.
5. Serve warm, cut into strips for babies.

Good to know

Serve with Greek yogurt or hummus for dipping. You can substitute fresh spinach with 4 cubes of frozen spinach, defrosted.
