Ingredients
- 1 quartered lengthways Courgette
- 1 tbsp melted Coconut oil
- 2 tbsp grated Parmesan cheese
- 1/4 tsp dried Thyme
- 1 Egg
Preparation
- Preheat the oven to 180°C (356°F).
- Place 1 quartered lengthways Courgette on a rack over a baking tray and brush with 1 tbsp melted Coconut oil.
- Sprinkle with 2 tbsp grated Parmesan cheese and 1/4 tsp dried Thyme.
- Bake for 15 minutes until lightly golden.
- While the courgettes are baking, cook 1 Egg in boiling water for 8 minutes.
- Serve the boiled Egg in an egg cup with the courgette dippers on the side.

Good to know
