Ingredients
1 quartered lengthways Courgette, 1 tbsp melted Coconut oil, 2 tbsp grated Parmesan cheese, 1/4 tsp dried Thyme, 1 Egg
Preparation
1. Preheat the oven to 180°C (356°F). 2. Place 1 quartered lengthways Courgette on a rack over a baking tray and brush with 1 tbsp melted Coconut oil. 3. Sprinkle with 2 tbsp grated Parmesan cheese and 1/4 tsp dried Thyme. 4. Bake for 15 minutes until lightly golden. 5. While the courgettes are baking, cook 1 Egg in boiling water for 8 minutes. 6. Serve the boiled Egg in an egg cup with the courgette dippers on the side.
