Ingredients

  • 1 quartered lengthways Courgette
  • 1 tbsp melted Coconut oil
  • 2 tbsp grated Parmesan cheese
  • 1/4 tsp dried Thyme
  • 1 Egg

Preparation

  1. Preheat the oven to 180°C (356°F).
  2. Place 1 quartered lengthways Courgette on a rack over a baking tray and brush with 1 tbsp melted Coconut oil.
  3. Sprinkle with 2 tbsp grated Parmesan cheese and 1/4 tsp dried Thyme.
  4. Bake for 15 minutes until lightly golden.
  5. While the courgettes are baking, cook 1 Egg in boiling water for 8 minutes.
  6. Serve the boiled Egg in an egg cup with the courgette dippers on the side.

Good to know

As your child gets older, you can serve them softer eggs that need less boiling time. You can also use Cheddar cheese instead of Parmesan.
