Ingredients

  • 1/2 Avocado
  • 1/2 diced Tomato
  • 1 tbsp chopped Coriander
  • 1 thinly sliced Spring onion
  • 1 squeeze Lemon juice
  • 3 rashers cooked until crispy Bacon
  • 2 boiled Egg
  • drizzle extra virgin Olive oil

Preparation

  1. Spoon 1/2 Avocado into a bowl, mash until soft but not completely smooth.
  2. Stir in 1/2 diced Tomato, 1 tbsp chopped Coriander, 1 thinly sliced Spring onion, and 1 squeeze Lemon juice. Season with salt and pepper.
  3. Spread the avocado mix onto a plate, top with 3 rashers cooked until crispy Bacon and 2 boiled Eggs.
  4. Sprinkle a little fresh Coriander and drizzle extra virgin Olive oil over the top.
