Ingredients
- 1 large Apple
- 1 large Carrot
- 270g / 9.5oz old-fashioned Rolled porridge oats
- 50g / 1.7oz soft Coconut oil
- 45g / 1.6oz 100% Apple purée
- 100g / 3.5oz dark Raisins
- 2 tsp heaped Ground cinnamon
- 2 tsp pure Vanilla extract
- 1 tsp Baking powder
Preparation
- Preheat the oven to 200°C (400°F).
- Grate 1 large Apple and 1 large Carrot.
- Add grated Apple and Carrot to a blender with 270g / 9.5oz old-fashioned Rolled porridge oats, 50g / 1.7oz soft Coconut oil, 45g / 1.6oz 100% Apple purée, 100g / 3.5oz dark Raisins, 2 heaped tsp Ground cinnamon, 2 tsp pure Vanilla extract, and 1 tsp Baking powder. Blend until Raisins are chopped.
- Spoon mixture into a lined 20cm (8in) brownie tin.
- Bake for 15-20 mins until edges darken.
- Remove, cool for 5 mins, cut into 18 slices.
