Ingredients

  • 2 tbsp Cream
  • 2 tbsp Butter
  • 450g / 15.87oz cooked Cauliflower
  • 2 Egg yolks
  • 100g / 3.52oz grated Cheddar cheese
  • 1 tsp Baking powder
  • 4 Egg whites

Preparation

  1. Preheat the oven to 180°C (356°F).
  2. Line two baking trays with silicone baking paper.
  3. Melt 2 tbsp Cream and 2 tbsp Butter.
  4. Blend 450g / 15.87oz cooked Cauliflower with the melted Cream and Butter, then cool completely.
  5. Stir in 2 Egg yolks, 100g / 3.52oz grated Cheddar cheese, and 1 tsp Baking powder.
  6. Whisk 4 Egg whites until stiff and fold 1/4 into the Cauliflower mixture, then fold in the rest.
  7. Pipe or scoop the mixture into tots on the baking trays (3cm each, spaced apart).
  8. Bake for 15-20 minutes until golden.
