Ingredients

1 small Cauliflower, 1 clove Garlic, 1 Egg, 170g / 6oz Self-raising flour, 90g / 3oz Cheddar, 100ml / 3.5fl oz full-fat Milk, 1 tsp Baking powder, to taste ground Black pepper, for cooking Olive oil

Preparation

1. Remove the florets from 1 small Cauliflower and add to a food processor with 1 clove Garlic. Process until the cauliflower resembles fine breadcrumbs. 2. Add the rest of the ingredients (1 Egg, 170g / 6oz Self-raising flour, 90g / 3oz Cheddar, 100ml / 3.5fl oz full-fat Milk, 1 tsp Baking powder, and a grinding of ground Black pepper) and blend until just combined. Do not over-mix. 3. Heat a large non-stick frying pan over medium heat with a drizzle of Olive oil. 4. Take slightly heaped tablespoons of the mixture and dollop into the pan, ensuring the patties do not touch. 5. Smooth into a rough circle shape and cook for about 2 minutes on each side until golden and cooked through. 6. Repeat until all the mixture is used.
