Ingredients
- 220g / 8oz Plain flour
- 0.5 tsp Cayenne pepper
- 1 heaped tsp Smoked paprika
- 140g / 5oz cut into cubes and chilled Unsalted butter
- 240g / 9oz grated Cheddar
- 3 heaped tbsp Chia seeds
- 1 small beaten Egg
Preparation
- Preheat the oven to 200°C (425°F).
- Add 220g / 8oz plain flour, 0.5 tsp cayenne pepper, 1 heaped tsp smoked paprika, and 140g / 5oz unsalted butter to a food processor and blitz until it resembles fine breadcrumbs.
- Add 240g / 9oz grated Cheddar and 3 heaped tbsp chia seeds, and blitz again briefly until combined.
- Gradually add 1 beaten small egg until the dough comes together.
- Tip the dough onto a floured surface and form into a ball.
- Roll out the dough to 3mm (1/8in) thick, dusting with flour as needed.
- Cut into shapes using a cookie cutter or knife.
- Place the crackers on a non-stick baking tray and prick with a fork.
- Bake for 8-10 minutes until lightly colored and crisp. Check after 8 minutes.

Good to know
Store crackers in an airtight container for up to 1 week. Optional: Use 1 tbsp ground flaxseeds mixed with 2.5 tbsp warm water in place of the egg.
