Ingredients

  • 1 cup Baby spinach
  • 80g / 2.82oz shredded Cooked chicken breast
  • 1 halved Hard-boiled egg
  • 65g / 2.29oz Tinned corn kernels
  • 50g / 1.76oz halved Cherry tomatoes
  • 60g / 2.12oz cut into large chunks Cucumber
  • 1/4 chopped Avocado
  • 1 thinly sliced Spring onion
  • 5 halved Black olives
  • 1 tbsp finely chopped Dill
  • 1 tbsp finely chopped Coriander leaves
  • 1/4 tsp Freshly ground black pepper
  • 1 tbsp Blue Ranch Dressing
  • 40g / 1.41oz trimmed Green beans

Preparation

  1. Put 40g / 1.41oz trimmed Green beans in a microwave-safe bowl with a splash of water and cook on High for 1.5 minutes. Drain and refresh under cold water.
  2. Put 1 cup / 1 cup Baby spinach, cooked Green beans, 80g / 2.82oz shredded Cooked chicken breast, 1 halved Hard-boiled egg, 65g / 2.29oz Tinned corn kernels, 50g / 1.76oz halved Cherry tomatoes, 60g / 2.12oz Cucumber cut into large chunks, 1/4 chopped Avocado, 1 thinly sliced Spring onion, 5 halved Black olives, 1 tbsp finely chopped Dill, and 1 tbsp finely chopped Coriander leaves in a large container, and sprinkle with 1/4 tsp Freshly ground black pepper.
  3. Pour 1 tbsp Blue Ranch Dressing into a small container to drizzle over the salad just before serving.

Good to know

If you aren’t a blue cheese fan, this salad is equally delicious with a vinaigrette dressing. Barbecued corn is beautiful in this salad.
