Ingredients

50g / 1.76oz Millet, Salt, 1 Onion, 150g / 5.29oz small Zucchini, 100g / 3.53oz canned Corn, 1/2 bunch Parsley, 100g / 3.53oz Gouda cheese, 1 tbsp Rapeseed oil, 50g / 1.76oz Crème fraîche, 4 Egg, Pepper

Preparation

1. Rinse 50g / 1.76oz Millet under hot water and drain. 2. Boil Millet in 120ml salted water, cook on low heat for 7-10 minutes, then let it swell for 5 minutes off the heat. 3. Peel and finely dice 1 Onion. 4. Clean and grate 150g / 5.29oz small Zucchini, squeeze out moisture. 5. Drain 100g / 3.53oz canned Corn and press out moisture. 6. Wash, dry, and finely chop 1/2 bunch of Parsley. 7. Grate 100g / 3.53oz Gouda cheese. 8. Heat 1 tbsp Rapeseed oil in a pan and sauté diced Onion until translucent. Let it cool. 9. Mix 50g / 1.76oz Crème fraîche and 4 Eggs in a bowl, season with Salt and Pepper. 10. Mix Millet, Zucchini, Corn, Parsley, Cheese, and Onion with the Egg mixture. 11. Heat oil in a pan. Shape the mixture into 15 fritters using a tablespoon and fry each for 3-4 minutes on each side until golden brown. 12. Drain on kitchen paper and serve cooled.
