Ingredients
- 165g / 5.75oz fresh Fresh raw prawns (shrimp)
- 4 tbsp self-raising Self-raising flour
- 1 tbsp Cornflour (cornstarch)
- 1 roughly chopped Garlic clove
- 2 roughly chopped Spring onions (scallions)
- 1 Egg
- 1 juice of Lime
- small handful leaves and stalks Coriander (cilantro)
- 1 tbsp Olive oil or sunflower oil
- to taste freshly ground Black pepper
Preparation
- Add all ingredients except oil to a food processor with black pepper and blend until no large pieces remain.
- Heat a heavy-bottomed, non-stick frying pan over medium heat.
- Scoop tablespoons of mixture into the pan, spreading into circles.
- Cook for a couple of minutes until golden, then flip and press gently, cooking for another couple of minutes until crispy.
- Remove from the pan and serve.
