Ingredients
- 1 cup soaked Walnut halves and pieces
- 1 roughly chopped Celery stalk
- 0.5 roughly chopped Red bell pepper
- 2 tbsp diced Red onion
- 0.75 tsp Kosher salt
- 4 Toasted nori sheets
- 4 cups Spring mix
- 1 grated Carrot
- 1 cut into matchsticks Celery stalk
- 1 ripe Avocado
Preparation
- Combine 1 cup soaked Walnut halves and pieces, 1 roughly chopped Celery stalk, 0.5 roughly chopped Red bell pepper, 2 tbsp diced Red onion, and 0.75 tsp Kosher salt in a food processor and blend until smooth.
- Take a sheet of Toasted nori, spread 1 cup Spring mix down the center, then top with one-quarter of the pâté, grated Carrot, Celery matchsticks, and sliced Avocado.
- Carefully roll up the wrap.
- Repeat with the remaining nori sheets and fillings. Serve immediately.
