Ingredients
- 2 tbsp Butter
- 1 finely chopped Onion
- 1 peeled and grated Carrot
- 1 peeled and grated Apple or pear
- 300g / 10.58oz cubed Chicken breast
- 2 tsp chopped Parsley
- 4 tbsp Coconut oil
- for dipping Crème fraîche
Preparation
- Heat 2 tbsp Butter in a pan and gently fry 1 finely chopped Onion and 1 peeled and grated Carrot until soft.
- Using a sieve, squeeze as much water as you can out of the 1 peeled and grated Apple or pear.
- Place 300g / 10.58oz cubed Chicken breast in a food processor and add the cooked Onion mix, Apple, and 2 tsp chopped Parsley. Pulse gently until well combined but not too smooth.
- Heat 4 tbsp Coconut oil in a pan and drop spoonfuls of the mixture into the pan. Cook until golden brown, then turn them over with a spatula. Once golden on both sides, they are done.
- Drain on kitchen paper, allow to cool, and serve with Crème fraîche for dipping.
