Ingredients

1 tbsp Sunflower or olive oil, 1 diced White onion, 1 roughly chopped Garlic clove, 260g / 9oz Frozen peas, 1 Low-salt vegetable or chicken stock cube, 500g / 17.6oz Mixed precooked grains, 30g / 1.05oz grated Cheddar, 1 heaped tbsp Mascarpone, to taste Freshly ground black pepper

Preparation

1. Heat 1 tbsp Sunflower or olive oil in a saucepan over low-medium heat. 2. Add 1 diced White onion and sauté for 2 minutes. 3. Add 1 roughly chopped Garlic clove and cook for another 2 minutes. 4. Add 260g / 9oz Frozen peas and 300ml / 10fl oz boiling water. 5. Crumble in 1 Low-salt vegetable or chicken stock cube and add freshly ground black pepper. 6. Simmer for 6 minutes. 7. Remove from heat and blend until smooth. 8. Stir in 500g / 17.6oz Mixed precooked grains and add 100-150ml / 3.4-5fl oz water until thick. 9. Return to heat for 5 minutes. 10. Stir in 1 heaped tbsp Mascarpone and 30g / 1.05oz grated Cheddar.
