Ingredients
- 1 tbsp Sunflower or olive oil
- 1 diced White onion
- 1 roughly chopped Garlic clove
- 260g / 9oz Frozen peas
- 1 Low-salt vegetable or chicken stock cube
- 500g / 17.6oz Mixed precooked grains
- 30g / 1.05oz grated Cheddar
- 1 heaped tbsp Mascarpone
- to taste Freshly ground black pepper
Preparation
- Heat 1 tbsp Sunflower or olive oil in a saucepan over low-medium heat.
- Add 1 diced White onion and sauté for 2 minutes.
- Add 1 roughly chopped Garlic clove and cook for another 2 minutes.
- Add 260g / 9oz Frozen peas and 300ml / 10fl oz boiling water.
- Crumble in 1 Low-salt vegetable or chicken stock cube and add freshly ground black pepper.
- Simmer for 6 minutes.
- Remove from heat and blend until smooth.
- Stir in 500g / 17.6oz Mixed precooked grains and add 100-150ml / 3.4-5fl oz water until thick.
- Return to heat for 5 minutes.
- Stir in 1 heaped tbsp Mascarpone and 30g / 1.05oz grated Cheddar.
