Ingredients
2 sliced Aubergine, 4 tbsp melted Coconut oil, 125ml / 4.23fl oz Secret vegetable tomato sauce, 60g / 2.11oz grated Mozzarella
Preparation
1. Preheat the oven to 180°C (356°F). 2. Place the sliced Aubergine on a roasting tray and brush with the melted Coconut oil. Season with a little salt and pepper. 3. Roast the Aubergine until soft and slightly browned, about 30 minutes. 4. Top each slice of Aubergine with some Secret vegetable tomato sauce and grated Mozzarella. 5. Bake the topped Aubergine slices for 10 minutes until the cheese is melted and bubbling.
