Ingredients
- 2 sliced Aubergine
- 4 tbsp melted Coconut oil
- 125ml / 4.23fl oz Secret vegetable tomato sauce
- 60g / 2.11oz grated Mozzarella
Preparation
- Preheat the oven to 180°C (356°F).
- Place the sliced Aubergine on a roasting tray and brush with the melted Coconut oil. Season with a little salt and pepper.
- Roast the Aubergine until soft and slightly browned, about 30 minutes.
- Top each slice of Aubergine with some Secret vegetable tomato sauce and grated Mozzarella.
- Bake the topped Aubergine slices for 10 minutes until the cheese is melted and bubbling.
