Ingredients
- 750g / 26.46oz Beef mince
- 1 tbsp grated fresh Ginger
- 3 thinly sliced Spring onions
- 3 tbsp chopped fresh Coriander
- 3 tbsp Coconut flour
- 0.5 trimmed
- seeded and finely chopped Red pepper
- 150g / 5.29oz fresh
- grated and liquid squeezed out Pineapple
- 2 lightly beaten Eggs
- for frying Coconut oil
- 500ml / 16.91fl oz homemade secret Vegetable tomato sauce
- 120g / 4.23oz grated Mozzarella
Preparation
- Preheat the oven to 180°C (356°F).
- Mix 750g / 26.46oz beef mince, 1 tbsp grated fresh ginger, 3 thinly sliced spring onions, and 3 tbsp chopped fresh coriander in a bowl.
- Stir in 3 tbsp coconut flour, 0.5 trimmed, seeded and finely chopped red pepper, 150g / 5.29oz fresh grated pineapple with liquid squeezed out, and 2 lightly beaten eggs. Season with salt and pepper.
- Roll the mixture into golf ball-sized meatballs.
- Heat coconut oil in a frying pan over high heat and brown the meatballs.
- Place browned meatballs in an ovenproof dish, top with 500ml / 16.91fl oz homemade secret vegetable tomato sauce, and 120g / 4.23oz grated mozzarella.
- Bake for about 25 minutes until bubbling and gooey.
