Ingredients

750g / 26.46oz Beef mince, 1 tbsp grated fresh Ginger, 3 thinly sliced Spring onions, 3 tbsp chopped fresh Coriander, 3 tbsp Coconut flour, 0.5 trimmed, seeded and finely chopped Red pepper, 150g / 5.29oz fresh, grated and liquid squeezed out Pineapple, 2 lightly beaten Eggs, for frying Coconut oil, 500ml / 16.91fl oz homemade secret Vegetable tomato sauce, 120g / 4.23oz grated Mozzarella

Preparation

1. Preheat the oven to 180°C (356°F). 2. Mix 750g / 26.46oz beef mince, 1 tbsp grated fresh ginger, 3 thinly sliced spring onions, and 3 tbsp chopped fresh coriander in a bowl. 3. Stir in 3 tbsp coconut flour, 0.5 trimmed, seeded and finely chopped red pepper, 150g / 5.29oz fresh grated pineapple with liquid squeezed out, and 2 lightly beaten eggs. Season with salt and pepper. 4. Roll the mixture into golf ball-sized meatballs. 5. Heat coconut oil in a frying pan over high heat and brown the meatballs. 6. Place browned meatballs in an ovenproof dish, top with 500ml / 16.91fl oz homemade secret vegetable tomato sauce, and 120g / 4.23oz grated mozzarella. 7. Bake for about 25 minutes until bubbling and gooey.
