Ingredients
- 80g / 2.82oz Coconut sugar
- 1/2 tsp Baking soda
- 120g / 4.23oz salted
- unsweetened Peanut butter
- 1 organic Egg
Preparation
- Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
- Whisk together 80g / 2.82oz Coconut sugar and 1/2 tsp Baking soda.
- Stir in 120g / 4.23oz salted, unsweetened Peanut butter, mixing to combine.
- Crack in 1 organic Egg and mix thoroughly.
- Roll into 8 equal balls and arrange evenly on the baking sheet.
- Bake for 10 to 12 minutes, turning the pan front to back halfway through, until lightly golden.
- Remove from the oven and let cool to room temperature before eating.

The type of peanut butter you use will change the texture. Thicker natural peanut butter with no added oils will yield a firmer cookie. They’re great made with any smooth peanut butter.
