Ingredients
- 2 tbsp Butter
- 1 roughly chopped Onion
- 250g / 8.82oz roughly chopped Ham
- 4 Eggs
- 2 Egg yolks
- 500ml / 16.91fl oz Cream
- 100g / 3.53oz grated Cheddar
- to taste Salt
- to taste Pepper
Preparation
- Preheat the oven to 180°C (356°F).
- Melt 2 tbsp Butter in a frying pan and gently fry 1 roughly chopped Onion until soft.
- Add 250g / 8.82oz roughly chopped Ham and remove from the stove.
- Whisk together 4 Eggs, 2 Egg yolks, and 500ml / 16.91fl oz Cream with a little Salt and Pepper.
- Grease a large 12-cup muffin pan.
- Spoon the Onion and Ham mixture into the bases of the muffin pan and sprinkle over 100g / 3.53oz grated Cheddar.
- Pour the Egg and Cream mixture into each muffin cup until it is about 1mm from the top.
- Bake for about 25 minutes until the egg mixture is set and the top is golden.
- Cool for 10 minutes and remove from the tin. Serve hot or cold.
