How to Prepare
1. Cut 400g / 14.1oz skinless chicken breast fillets into 2 cm cubes and place in a glass dish. 2. Whisk 60ml / 2.03fl oz extra virgin olive oil, juice of 1 lemon, 1 tbsp Dijon mustard, 1 crushed garlic clove, 1/2 tsp ground black pepper, and a pinch of salt flakes. 3. Pour marinade over chicken and marinate for 15 minutes. 4. Soak 8 bamboo skewers in water for 10 minutes. 5. Heat a barbecue or chargrill pan to medium. 6. Thread chicken onto skewers and cook, turning, for 10 minutes or until cooked through.
Good to Know
When short on time, mix chicken with marinade and thread onto skewers without marinating. Alternatively, marinate the chicken the night before or in the morning. Serve with wholemeal tortillas and your choice of coleslaw, Greek-style yoghurt, hummus, avocado, cheese, kimchi, or lettuce.
