Ingredients
- 120g / 4.23oz Steel-cut organic oats
- 250ml / 8.45fl oz Coconut milk
- 250ml / 8.45fl oz Water
- 1/2 tsp Vanilla extract
- pinch ground Ground cinnamon
- 130g / 4.59oz Peeled and diced mango
Preparation
- In a small saucepan, combine 120g / 4.23oz steel-cut organic oats, 250ml / 8.45fl oz coconut milk, and 250ml / 8.45fl oz water. Cook gently over medium heat, stirring occasionally, until the mixture comes to a boil. Cook for about 5 minutes until the oats start to soften.
- Stir in 1/2 tsp vanilla extract, a pinch of ground cinnamon, and 130g / 4.59oz peeled and diced mango. Cook for 3-4 minutes until the mango is warmed through.
- Take the oats off the heat.
- Using a hand blender, blend the oats until the mango is smooth and combined. Allow to cool before serving.
