120g / 4.23oz Steel-cut organic oats, 250ml / 8.45fl oz Coconut milk, 250ml / 8.45fl oz Water, 1/2 tsp Vanilla extract, pinch ground Ground cinnamon, 130g / 4.59oz Peeled and diced mango
Preparation
1. In a small saucepan, combine 120g / 4.23oz steel-cut organic oats, 250ml / 8.45fl oz coconut milk, and 250ml / 8.45fl oz water. Cook gently over medium heat, stirring occasionally, until the mixture comes to a boil. Cook for about 5 minutes until the oats start to soften. 2. Stir in 1/2 tsp vanilla extract, a pinch of ground cinnamon, and 130g / 4.59oz peeled and diced mango. Cook for 3-4 minutes until the mango is warmed through. 3. Take the oats off the heat. 4. Using a hand blender, blend the oats until the mango is smooth and combined. Allow to cool before serving.
