
Maple-Baked Banana with Homemade Custard

How to Prepare
1. Preheat the oven to 180°C (356°F). 2. Cut 4 Bananas in half lengthways, keeping the skin on. 3. Brush with 2 tsp Pure maple syrup and sprinkle with 0.5 tsp Freshly grated nutmeg. 4. Place the bananas on a baking tray and bake for 25 minutes or until soft. 5. To make the custard, heat 250 ml Milk, 1 tsp Vanilla bean paste, and 0.25 tsp Ground cinnamon in a small saucepan over medium heat until almost boiling, then remove from heat. 6. Whisk 4 Egg yolks, 1 tbsp Honey, and 2 tsp Arrowroot in a heatproof bowl until well combined. 7. Slowly pour the hot milk mixture into the egg mixture while whisking. 8. Pour the mixture back into the saucepan and stir over low heat until the custard thickens. 9. Serve the baked bananas with the warm custard.
Good to Know
Flavour the custard with grated orange, lemon, or lime zest. Before baking the bananas, sprinkle them with a little coconut or chopped nuts.
