Ingredients
- 4 Banana
- 2 tsp Pure maple syrup
- 0.5 tsp Freshly grated nutmeg
- 250 ml / 8.45 fl oz Milk
- 1 tsp Vanilla bean paste
- 0.25 tsp Ground cinnamon
- 4 Egg yolks
- 1 tbsp Honey
- 2 tsp Arrowroot
Preparation
- Preheat the oven to 180°C (356°F).
- Cut 4 Bananas in half lengthways, keeping the skin on.
- Brush with 2 tsp Pure maple syrup and sprinkle with 0.5 tsp Freshly grated nutmeg.
- Place the bananas on a baking tray and bake for 25 minutes or until soft.
- To make the custard, heat 250 ml Milk, 1 tsp Vanilla bean paste, and 0.25 tsp Ground cinnamon in a small saucepan over medium heat until almost boiling, then remove from heat.
- Whisk 4 Egg yolks, 1 tbsp Honey, and 2 tsp Arrowroot in a heatproof bowl until well combined.
- Slowly pour the hot milk mixture into the egg mixture while whisking.
- Pour the mixture back into the saucepan and stir over low heat until the custard thickens.
- Serve the baked bananas with the warm custard.

Good to know
Flavour the custard with grated orange, lemon, or lime zest. Before baking the bananas, sprinkle them with a little coconut or chopped nuts.
