Ingredients
- 160ml / 5.41fl oz Olive oil
- 4 peeled and smashed Garlic cloves
- 1/2 tsp Chili flakes
- 1 Lemon
- 360ml / 12.17fl oz with pits Mixed olives
- 1/2 tsp Dried thyme
- 1/2 tsp Dried oregano
Preparation
- Remove zest from 1 Lemon in strips, avoiding white pith.
- Squeeze lemon juice into a large jar.
- Add 360ml / 12.17fl oz with pits Mixed olives, 1/2 tsp Dried thyme, and 1/2 tsp Dried oregano.
- Heat 160ml / 5.41fl oz Olive oil, 4 peeled and smashed Garlic cloves, and 1/2 tsp Chili flakes in a saucepan over medium heat to a low simmer.
- Pour the oil mixture over the olives.
- Let cool to room temperature, cover, and refrigerate for at least 24 hours before serving.
