Ingredients

  • 160ml / 5.41fl oz Olive oil
  • 4 peeled and smashed Garlic cloves
  • 1/2 tsp Chili flakes
  • 1 Lemon
  • 360ml / 12.17fl oz with pits Mixed olives
  • 1/2 tsp Dried thyme
  • 1/2 tsp Dried oregano

Preparation

  1. Remove zest from 1 Lemon in strips, avoiding white pith.
  2. Squeeze lemon juice into a large jar.
  3. Add 360ml / 12.17fl oz with pits Mixed olives, 1/2 tsp Dried thyme, and 1/2 tsp Dried oregano.
  4. Heat 160ml / 5.41fl oz Olive oil, 4 peeled and smashed Garlic cloves, and 1/2 tsp Chili flakes in a saucepan over medium heat to a low simmer.
  5. Pour the oil mixture over the olives.
  6. Let cool to room temperature, cover, and refrigerate for at least 24 hours before serving.
