Ingredients

2 tbsp Butter, 1 finely chopped Onion, 2 finely chopped Celery stalk, 1 peeled and grated Carrot, 3 rashers finely chopped Bacon, 2 tsp finely chopped Rosemary, 1 clove crushed Garlic, 400g / 14.11oz Beef mince, 2 tbsp Tomato paste, 400g / 14.11oz blended Chopped tomatoes, 125ml / 4.23fl oz Beef stock or water, 1 Bay leaf, to season Salt, 6 Eggs, for greasing Butter

Preparation

1. Heat 2 tbsp Butter in a saucepan and cook 1 finely chopped Onion, 2 finely chopped Celery stalks, 1 peeled and grated Carrot, 3 finely chopped Bacon rashers, and 2 tsp finely chopped Rosemary until soft. Add 1 crushed Garlic clove and cook for a minute. 2. Add 400g / 14.11oz Beef mince and brown it. 3. Stir in 2 tbsp Tomato paste and fry for a few minutes. 4. Add 400g / 14.11oz blended Chopped tomatoes, 125ml / 4.23fl oz Beef stock or water, and 1 Bay leaf. Simmer for 45 minutes until thickened. Season with Salt. 5. Whisk 6 Eggs together. 6. Grease a frying pan with Butter and cook the Eggs into wraps. 7. Fill the wraps with the mince, grated cheese, avocado slices, fresh coriander, and sour cream or cream cheese. Roll up and serve. Optionally, top with cheese and grill until gooey.
