Ingredients
- 3 ripe Bananas
- 240g / 8.47oz Oat flour
- 1 tsp Vanilla extract
- 1 tsp Baking powder
- 35g / 1.23oz Coconut sugar
- 250ml / 8.45fl oz Coconut milk
Preparation
- Preheat the oven to 180°C (350°F).
- Peel and mash 3 ripe bananas in a large mixing bowl.
- Add 240g / 8.47oz oat flour, 1 tsp vanilla extract, 1 tsp baking powder, and 35g / 1.23oz coconut sugar to the bowl and combine.
- Stir in 250ml / 8.45fl oz coconut milk until combined.
- Pour the mixture into a prepared loaf pan lined with parchment paper.
- Bake in the preheated oven for 50 minutes until a skewer inserted into the middle comes out clean.
- Leave to cool on a wire rack before slicing to serve.

If you do not have oat flour, you can make your own by blending oats in a high-speed blender, or alternatively you could use buckwheat flour.
