Ingredients
- 3 cups Rolled oats
- 2 tbsp Ground flaxseed
- 1 tsp Baking powder
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 1.5 cups Milk
- 1/2 cup very ripe Mashed banana
- 1/4 cup Maple syrup
- 1 tsp Vanilla extract
Preparation
- Preheat the oven to 177°C (350°F) and grease a standard muffin tin well.
- In a big bowl, combine 3 cups rolled oats, 2 tbsp ground flaxseed, 1 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt, 1 1/2 cups milk, 1/2 cup very ripe mashed banana, 1/4 cup maple syrup, and 1 tsp vanilla extract. Stir well.
- Add batter to the prepared muffin pan, using about 1/4 cup in each cup.
- Top with fruit or chocolate chips and bake for 30-34 minutes or until lightly golden brown around the edges and firm to the touch.
- Let cool slightly and serve, or store and enjoy later.
