Ingredients

3 cups Rolled oats, 2 tbsp Ground flaxseed, 1 tsp Baking powder, 1/2 tsp Cinnamon, 1/4 tsp Salt, 1.5 cups Milk, 1/2 cup very ripe Mashed banana, 1/4 cup Maple syrup, 1 tsp Vanilla extract

Preparation

1. Preheat the oven to 177°C (350°F) and grease a standard muffin tin well. 2. In a big bowl, combine 3 cups rolled oats, 2 tbsp ground flaxseed, 1 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt, 1 1/2 cups milk, 1/2 cup very ripe mashed banana, 1/4 cup maple syrup, and 1 tsp vanilla extract. Stir well. 3. Add batter to the prepared muffin pan, using about 1/4 cup in each cup. 4. Top with fruit or chocolate chips and bake for 30-34 minutes or until lightly golden brown around the edges and firm to the touch. 5. Let cool slightly and serve, or store and enjoy later.
