Ingredients

80g / 3oz Coconut oil, 2 ripe Bananas, 3 tbsp smooth or crunchy Peanut butter, 300g / 10.5oz old-fashioned Rolled porridge oats, 40g / 1.5oz dried unsweetened shredded Desiccated coconut, 70g / 2.5oz dark Raisins

Preparation

1. Preheat the oven to 180°C (200°C fan) / 400°F. 2. Measure 80g / 3oz Coconut oil into a small bowl and microwave for a minute until melted. 3. Add 2 ripe Bananas to a large mixing bowl and mash with a fork. Stir in 3 tbsp smooth or crunchy Peanut butter, melted Coconut oil, and optional honey or maple syrup until well combined. 4. Add 300g / 10.5oz old-fashioned Rolled porridge oats, 40g / 1.5oz dried unsweetened shredded Desiccated coconut, and 70g / 2.5oz dark Raisins. Stir well until all wet ingredients have mixed into the dry. 5. Tip the mixture into a lined square brownie tin and compact down with a metal tablespoon. 6. Bake in the preheated oven for 15-20 minutes until edges turn golden. Let sit for a few minutes, then lift and cut into 15 rectangles. Transfer to a wire rack. 7. Optionally, melt dark chocolate and drizzle over the flapjack pieces.
