Ingredients
1 bunch thinly sliced Lacinato kale, 1 tbsp Fresh lemon juice, 3 tbsp Olive oil, 1 tbsp Soy sauce, to taste Sea salt, to taste Black pepper, 3 cups Cooked brown rice, 1 pound Honey Sriracha Salmon, 1 large ripe Avocado, 1 cup drained well Sauerkraut, 1/4 cup Miso Mayo, 1 tbsp Toasted sesame seeds, 1 tbsp Hulled hemp seeds
Preparation
1. Combine 1 bunch thinly sliced Lacinato kale, 1 tbsp fresh lemon juice, 3 tbsp Olive oil, and 1 tbsp soy sauce in a medium bowl. Season with sea salt and black pepper, then massage the kale until slightly softened. Set aside. 2. Divide 3 cups cooked brown rice between four bowls. 3. Top each bowl with 1/4 pound Honey Sriracha Salmon, 1/4 large ripe avocado, 1/4 cup sauerkraut, and 1/4 of the massaged kale. 4. Drizzle 1/4 cup Miso Mayo over each bowl and garnish with 1 tbsp toasted sesame seeds and 1 tbsp hulled hemp seeds.
