Ingredients

  • 200g / 7oz old-fashioned Rolled oats
  • 100g / 3.5oz melted Unsalted butter
  • 2 Carrot
  • 1 Courgette
  • 140g / 5oz Cheddar
  • 3 Egg
  • 1 tsp Smoked paprika

Preparation

  1. Preheat the oven to 180°C (200°C/400°F).
  2. Coarsely grate 2 Carrots, 1 Courgette, and 140g / 5oz Cheddar and add to a large bowl.
  3. Add 200g / 7oz rolled oats, 100g / 3.5oz melted unsalted butter, 3 Eggs, and 1 tsp smoked paprika.
  4. Mix everything until combined.
  5. Pour mixture into a greased and lined 20cm / 8in baking tin.
  6. Press mixture flat and even with a spoon.
  7. Bake for 20-25 minutes until golden and crispy.

Good to know

Optional: Add 3 tsp chia seeds or 3 tsp ground flaxseeds. Try using nutritional yeast instead of Cheddar for a vegan option.
