Ingredients

1 peeled Garlic clove, 1 tbsp Extra virgin olive oil, 1/2 tsp Salt, 800g / 28.22oz Whole tomatoes, 1/2 tsp Freshly ground black pepper

Preparation

1. Gently bruise 1 peeled Garlic clove. 2. Heat 1 tbsp Extra virgin olive oil in a saucepan over medium heat. 3. Add the Garlic and 1/2 tsp Salt, shaking the saucepan and pressing the Garlic into the oil. Cook for 2-3 minutes until fragrant. 4. Add 800g / 28.22oz Whole tomatoes to the pan. 5. Add 60ml / 2.03fl oz water to each tin, swirl to remove residual tomato juice, and add to the pan. 6. Cook over medium-low heat for 5-10 minutes, stirring and crushing tomatoes. 7. If the sauce becomes too thick, loosen with 1-2 tbsp water. 8. Season with 1/2 tsp Freshly ground black pepper.

Good to know

To make this tomato sauce even richer in color and flavor, finely dice 1 small red or brown onion and add it to the oil with the garlic. Stir through fresh basil leaves at the end for a flavor boost.
