Ingredients
- 120ml / 4.06fl oz Salted
- unsweetened peanut butter
- 60ml / 2.03fl oz Raw honey
- 3 tbsp melted Coconut oil
- 4 pitted and roughly chopped Medjool dates
- 1 tsp Vanilla extract
- 0.25 tsp Kosher salt
- 60ml / 2.03fl oz roasted
- cooled
- and roughly chopped Raw peanuts
- 60ml / 2.03fl oz Hulled hemp seeds
- 60ml / 2.03fl oz Coconut oil
- 40g / 1.41oz Raw cacao or cocoa powder
- 2 tbsp Raw honey
- Flaky sea salt
Preparation
- Blend 120ml / 4.06fl oz salted, unsweetened peanut butter, 60ml / 2.03fl oz raw honey, 3 tbsp melted Coconut oil, 4 pitted and roughly chopped Medjool dates, 1 tsp vanilla extract, and 0.25 tsp kosher salt in a blender until clumpy.
- Stir in 60ml / 2.03fl oz roasted, cooled, and roughly chopped raw peanuts and 60ml / 2.03fl oz hulled hemp seeds.
- Transfer to a bowl and refrigerate for 30 minutes.
- Melt 60ml / 2.03fl oz coconut oil, whisk in 40g / 1.41oz raw cacao or cocoa powder and 2 tbsp raw honey, then cool for 10 minutes.
- Roll filling into 20 balls.
- Roll the balls in chocolate coating, sprinkle with flaky sea salt, and freeze for 1 hour.
