Ingredients
- 200g / 7oz drained Canned sweetcorn
- 100g / 3.5oz wilted Spinach
- 100g / 3.5oz Self-raising flour
- 2 Egg
- 70ml / 2.5fl oz Milk
- 1 tsp Baking powder
- 1 tbsp Oil
Preparation
- Add 200g / 7oz drained canned sweetcorn, 100g / 3.5oz wilted spinach, 100g / 3.5oz self-raising flour, 2 eggs, 70ml / 2.5fl oz milk, and 1 tsp baking powder to a blender and blend until smooth.
- Heat 1 tbsp oil in a large non-stick frying pan over medium heat.
- Spoon tablespoons of the mixture into the pan and shape into circles.
- Cook until bubbles form, then flip and cook until golden brown.
- Repeat with remaining batter.
