Ingredients

  • 2 tbsp Butter
  • 1 finely chopped Onion
  • 1 finely chopped Celery
  • 1 peeled and grated Carrot
  • 1 clove crushed Garlic
  • 1 tbsp Tomato paste
  • 400g / 14.1oz blended Peeled tomatoes
  • 400g / 14.1oz peeled and diced Sweet potatoes
  • 1 peeled
  • cored and grated Apple
  • 500ml / 16.9fl oz Vegetable or chicken stock
  • 1/4 tsp Ground nutmeg
  • a little for seasoning Salt

Preparation

  1. Melt 2 tbsp Butter in a large pot.
  2. Fry 1 finely chopped Onion, 1 finely chopped Celery stalk, 1 peeled and grated Carrot, and 1 crushed Garlic clove until soft.
  3. Add 1 tbsp Tomato paste and fry for 1 minute.
  4. Blend 400g / 14.1oz blended peeled Tomatoes and add to the pot with the remaining ingredients.
  5. Simmer for about 30 minutes until the Sweet potatoes are completely softened.
  6. Season with a little Salt and blend until smooth using a hand blender.
  7. Serve with chopped parsley if desired.
