Ingredients
- 2 tbsp Butter
- 1 finely chopped Onion
- 1 finely chopped Celery
- 1 peeled and grated Carrot
- 1 clove crushed Garlic
- 1 tbsp Tomato paste
- 400g / 14.1oz blended Peeled tomatoes
- 400g / 14.1oz peeled and diced Sweet potatoes
- 1 peeled
- cored and grated Apple
- 500ml / 16.9fl oz Vegetable or chicken stock
- 1/4 tsp Ground nutmeg
- a little for seasoning Salt
Preparation
- Melt 2 tbsp Butter in a large pot.
- Fry 1 finely chopped Onion, 1 finely chopped Celery stalk, 1 peeled and grated Carrot, and 1 crushed Garlic clove until soft.
- Add 1 tbsp Tomato paste and fry for 1 minute.
- Blend 400g / 14.1oz blended peeled Tomatoes and add to the pot with the remaining ingredients.
- Simmer for about 30 minutes until the Sweet potatoes are completely softened.
- Season with a little Salt and blend until smooth using a hand blender.
- Serve with chopped parsley if desired.
