Ingredients
- 10 Egg yolks
- 500ml / 16.91fl oz Milk
- 500ml / 16.91fl oz Double cream
- 1 tsp Vanilla extract
- to taste little Stevia
Preparation
- Whisk 10 Egg yolks until light and fluffy.
- Pour 500ml / 16.91fl oz Milk and 500ml / 16.91fl oz Double cream into a saucepan with 1 tsp Vanilla extract. Heat until boiling, then remove from heat.
- Add a little hot cream mixture to the Egg yolks, then pour the Egg yolk mixture back into the saucepan. Stir well.
- If desired, add a little Stevia to taste.
- Return saucepan to low heat, stirring constantly until thickened.
- Allow mixture to cool completely, then freeze in an ice-cream churner.
