Ingredients

  • 10 Egg yolks
  • 500ml / 16.91fl oz Milk
  • 500ml / 16.91fl oz Double cream
  • 1 tsp Vanilla extract
  • to taste little Stevia

Preparation

  1. Whisk 10 Egg yolks until light and fluffy.
  2. Pour 500ml / 16.91fl oz Milk and 500ml / 16.91fl oz Double cream into a saucepan with 1 tsp Vanilla extract. Heat until boiling, then remove from heat.
  3. Add a little hot cream mixture to the Egg yolks, then pour the Egg yolk mixture back into the saucepan. Stir well.
  4. If desired, add a little Stevia to taste.
  5. Return saucepan to low heat, stirring constantly until thickened.
  6. Allow mixture to cool completely, then freeze in an ice-cream churner.
