Ingredients
- 2 Egg
- 2 tbsp Milk
- 2 tbsp Butter
- 25g / 0.88oz Grated Cheese
- few slices cut into shapes Carrot
- few slices cut into shapes Red Pepper
- few slices cut into shapes Courgette
Preparation
- Boil a few slices of Carrot, Red Pepper, and Courgette cut into shapes until soft. Drain and set aside.
- In a bowl, whisk 2 Eggs and 2 tbsp Milk.
- Melt 2 tbsp Butter in a frying pan and pour in the egg mixture.
- Cook on low heat until the egg is cooked through.
- Sprinkle 25g / 0.88oz Grated Cheese over the top.
- Scatter the cooked vegetable shapes over the top and keep on the heat until the cheese has melted.
- Serve the omelette open so the shapes are visible or fold it over and place it on a plate.
