Ingredients
2 Egg, 2 tbsp Milk, 2 tbsp Butter, 25g / 0.88oz Grated Cheese, few slices cut into shapes Carrot, few slices cut into shapes Red Pepper, few slices cut into shapes Courgette
Preparation
1. Boil a few slices of Carrot, Red Pepper, and Courgette cut into shapes until soft. Drain and set aside. 2. In a bowl, whisk 2 Eggs and 2 tbsp Milk. 3. Melt 2 tbsp Butter in a frying pan and pour in the egg mixture. 4. Cook on low heat until the egg is cooked through. 5. Sprinkle 25g / 0.88oz Grated Cheese over the top. 6. Scatter the cooked vegetable shapes over the top and keep on the heat until the cheese has melted. 7. Serve the omelette open so the shapes are visible or fold it over and place it on a plate.
