Ingredients

100g / 3.53oz peeled and cubed Potato, 250ml / 8.45fl oz Vegetable stock, 200g / 7.05oz washed and sliced Courgettes, 200g / 7.05oz Broccoli florets, a sprinkle grated Mild cheese

Preparation

1. Place 100g peeled and cubed Potato and 250ml / 8.45fl oz vegetable stock in a saucepan and simmer with the lid on for 10-15 minutes until it softens. 2. Add 200g washed and sliced Courgettes and 200g Broccoli florets and simmer for 5-10 minutes until everything is soft. 3. Purée using a blender or hand-blender. 4. Add a sprinkle of grated Mild cheese if you're using it.
